  Sweet Potato Recipes: Best when Baker Sweet Potatoes are used.
Sweet Potato Pie

2 cups boiled and mashed Baker sweet potatoes
1 1/4 cups sugar
1 tsp. lemon flavoring
1 Tbsp. vanilla flavoring
1/2 tsp. ground cinammon
1/2 tsp. ground nutmeg
3 eggs (slightly beaten)
1 unbaked pie shell

Preheat oven to 350 degrees. Mix first 7 ingredients well then spoon into unbaked pie shell. Bake for about 1 hour. Let cool before serving.

Sweet Potato Casserole 

3 cups boiled and mashed Baker sweet potatoes
1 cup sugar
2 eggs (slightly beaten)
1 tsp. vanilla flavoring
1/2 cup milk


1/3 cups butter
2/3 cups light brown sugar
1/3 cups flour
1 cup chopped pecans

Combine first five ingredients and mix well. Pour into a greased casserole dish. For the topping: Cut butter into the sugar and flour until it crumbles. Add chopped pecans. Sprinkle over top of potatoe mixture. Bake at 350 degrees for 30 minutes. Can be served hot or cold. 
Sweet Potato Bread

3 cups mashed Baker sweet potatoes
3 cups flour
3/4 cups oil
2 cups sugar
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. ground cloves
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 eggs (slightly beaten)
1 cup chopped pecans

Mix dry ingredients in a separate bowl then the wet ingredients. Combine and mix well. Batter will be thick. Bake in 2 greased and floured loaf pans at 350 degrees for about 1 hour. Let cool for 10 minutes before removing from loaf pans.
